Creamy Cauliflower Mashed Potatoes With Garlic
Ingredients

- Cauliflower: 1 large head (cut into small florets)
- Garlic: 3 to 4 cloves (minced or finely chopped)
- Butter or Olive Oil: 2 tablespoons
- Cream Cheese or Sour Cream: 2 tablespoons (for ultimate creaminess)
- Salt & Black Pepper: To taste
- Milk: 1 to 2 tablespoons (only if needed to thin it out)
- Fresh Parsley or Chives: For garnish (optional)
Step-by-Step Instructions
Step 1: Boil the Cauliflower
Bring a large pot of salted water to a boil. Add the cauliflower florets. Cook for 10 to 12 minutes, or until the cauliflower is completely fork-tender and soft.
Step 2: Drain Thoroughly
Drain the cauliflower in a colander. Let it sit for 2 to 3 minutes to steam off excess moisture. Tip: Press it gently with a clean paper towel to remove as much water as possible so your mash isn’t watery.
Step 3: Sauté the Garlic
While the cauliflower drains, heat the butter or olive oil in a small pan over medium-low heat. Add the minced garlic and sauté for about 1 to 2 minutes until it becomes fragrant and lightly golden. Do not let it burn.
Step 4: Blend Until Smooth
Transfer the hot cauliflower into a food processor or blender. Pour the warm garlic and butter/oil mixture over it. Add the cream cheese, salt, and black pepper. Blend on high until the mixture becomes completely smooth, fluffy, and looks like mashed potatoes.
Note: If you do not have a blender, you can use a hand potato masher, though a blender makes it much creamier.
Step 5: Adjust and Serve
Taste the mash and add more salt or pepper if needed. If it is too thick, add a splash of milk and blend for another few seconds. Scoop it into a serving bowl, top with fresh herbs, and serve hot!

Healthy side dishes Before starting, gather these fresh ingredients from your kitchen or local store:
- Pasta: 1 packet or 8 ounces (Rotini, Fusilli, or any spiral shape works best)
- Cherry Tomatoes: 1 cup (cut into halves)
- Cucumber: 1 medium size (chopped into small bite-sized pieces)
- Bell Pepper: 1 orange or yellow pepper (diced)
- Black Olives: ½ cup (sliced)
- Feta Cheese: ½ cup (crumbled or cubed)
- Red Onion: ¼ cup (finely chopped)
Quick Homemade Dressing Ingredients:
- Olive Oil: ¼ cup
- Red Wine Vinegar: 2 tablespoons
- Dried Oregano: 1 teaspoon
- Salt & Black Pepper: According to your taste
Step-by-Step Instructions to Mix Everything Together
Making this salad is incredibly simple and only takes a few minutes of active preparation.
Step 1: Cook the Spiral Pasta
Bring a large pot of salted water to a rolling boil. Add your spiral pasta and cook it for about 8 to 10 minutes until it is cooked but still firm (al dente). Once done, drain the hot water completely and rinse the pasta under cold running water to stop the cooking process.
Step 2: Prep and Chop the Fresh Veggies
While your pasta is boiling, take a clean cutting board and wash all your fresh vegetables. Chop the cherry tomatoes into halves, dice your crunchy cucumbers, slice the olives, and cube the feta cheese as shown in the visual example.
Step 3: Whisk the Simple Dressing
In a small bowl or jar, pour the olive oil and red wine vinegar together. Add the dried oregano, a pinch of salt, and cracked black pepper. Mix it vigorously with a spoon until the dressing is well combined.
Step 4: Toss Everything and Serve It Cold
Take a large mixing bowl and add your cooled pasta into it. Throw in all your chopped vegetables, red onions, olives, and feta cheese. Pour the homemade dressing over the top and gently toss everything together until every spiral of pasta is nicely coated.
Your fresh salad is ready! For the absolute best flavor, let it chill in the fridge for an hour before serving so the pasta absorbs all the zesty juice.
